lemon cupcakes with lemon buttercream
cupcakes: duncan hines mix.
- 2 cups powdered sugar [or a bit more depending how thick you want your frosting]
- 1 stick [1/2 cup] butter
- zest and juice of 1 lemon
- 1/2 teaspoon vanilla extract
- pinch of salt
- [optional] a few drops of lemon extract
cream butter until fluffy before adding in powdered sugar slowly as to not create a giant sugary cloud in your kitchen. throw a pinch of salt in that fucker too while it beats up. then add in the zest [no pith please!] and the juice while not getting pips in that bitch because that would be gross. keep beating. it’ll look like a gloppy ass mess, but it’ll come together. add some more sugar if it’s not thick enough. guestimate the vanilla extract because you don’t feel like dirtying another spoon and then try not to spill the entire bottle of lemon extract in the bowl. pipe frosting onto cooled cupcakes while crying that you want to take a wilton cake class but they’re too expensive. bite into that fucker. mmm lemony goodness. declare that it has a good bake and a nice crumb like you’re mary berry or paul hollywood. fuck yeah.
